Ingredients for making lentil humus:
1 cup washed lentils
2 chopped onions
1 clove garlic, chopped
1 chopped carrot
Unrefined olive oil
1 strip of kombu seaweed or 2 bay leaves
One tablespoon miso (optional)
A splash of tamari (optional)
Steps to cook lentil hummus:
-In the casserole, heat the oil with the onion, garlic and a pinch of sea salt. Sauté without lid for 3 minutes.
-Add the carrot, lentils and seaweed or bay leaf. Sauté for 3 minutes.
– Cook the lentils: cover and cook lentils on low heat for 40 minutes.
– When the lentils are well cooked and soft, add the miso, tamari and sea salt to taste if necessary. If too much liquid remains, allow it to evaporate without a lid.
-Remove the bay leaf and mash until desired consistency.
– Can be served with chopped parsley
